Care & Use Instructions – Carbon Steel Pan

With proper care, your pan can last for generations and develop a naturally non-stick cooking surface.

Before First Use

  • Wash with warm water and a small amount of mild soap to remove any dust from shipping.
  • Dry immediately and thoroughly.
  • Your pan comes pre-seasoned with beef tallow, so it's ready to cook with right away.

Cooking Tips

  • Preheat your pan over medium heat for 1–3 minutes before adding oil or food.
  • Carbon steel heats quickly and evenly, so high heat is rarely necessary.
  • Use a small amount of cooking fat to help maintain the seasoning.
  • Safe for gas, electric, induction, and oven use.

Cleaning

  • Clean while the pan is still warm, if possible.
  • Wash with hot water and a soft brush, sponge, or non-abrasive scrubber.
  • For stuck-on food, simmer a little water in the pan for a few minutes, then gently scrape with a wooden spatula.
  • Avoid soaking the pan for extended periods.
  • Dry immediately after washing to prevent rust.

Maintaining the Seasoning

  • After cleaning and drying, apply a very thin layer of cooking oil or beef tallow while the pan is still warm.
  • Wipe away any excess with a clean cloth or paper towel.
  • The seasoning will continue to improve with regular use, becoming darker and more naturally non-stick over time.

Things to Avoid

  • Do not leave water in the pan.
  • Avoid storing food in the cookware.
  • Avoid prolonged cooking of highly acidic foods (such as tomato sauce or vinegar-based dishes) until the seasoning is well established.
  • Do not put your pan in the dishwasher.

If Rust Appears

Don't worry—surface rust is easy to fix.

  • Scrub away the rust with steel wool or a scouring pad.
  • Wash and dry the pan completely.
  • Apply a thin coat of oil or beef tallow.
  • Heat the pan until it begins to smoke lightly, then allow it to cool. Repeat if necessary.
